Another superb example of a natural processed coffee from Yirgacheffe. Yirgacheffe is a town in central southern Ethiopia, located in the Gedeo Zone.

Coffees from Yirgacheffe usually sit at an elevation between 1800 and 2200 meters above sea level and are grown predominantly by small holder farmers.

The name of the station and the village where this coffee is processed is Koke, it is a beautiful high altitude site with sweeping views of the valley. There are around 4000 smallholder farmers that deliver their cherries to this station. This coffee is a result of many years of experience where all the batches are carefully processed and monitored at every stage of the process.

This is a natural process lot, meaning that the coffee is not pulped and is sun-dried with the pulp on. In natural processing fully ripe cherries are hand picked, then they are sun-dried on African drying beds without any pulping or washing. In this particular case the cherries were dried on the drying tables for 15 days. Once the coffee has reached the optimum moisture level, it is taken into this city of Yirgacheffe to be hulled, graded, picked by hand and bagged up and prepared for export.

The combination of very high altitude and iron-rich, acidic soil creates the ideal growing situation to produce the bright, floral Yirgacheffe profile.
