However, La Esperanza has preserved much of its original tree population, maintaining productive and healthy coffee plants through integrated farming practices.\u003c\/p\u003e\n\u003cp\u003eThe farm managers at La Esperanza have trained their picking teams, many of whom return to the farm each harvest, to selectively hand-pick cherries at peak ripeness. This careful harvesting process ensures that the coffee reaches its maximum flavour potential. The cherries are then transported to San Miguel Mill, where each batch is processed individually under strict protocols to preserve the quality of the beans.\u003c\/p\u003e\n\u003cp\u003eThe meticulous work carried out at both farm and processing levels, combined with the farm’s exceptional microclimate and volcanic soils, contributes to a consistently distinctive cup profile across each harvest.\u003c\/p\u003e\n\u003cp\u003eCoffee is grown under the shade of century-old Mezcal trees, alongside the more traditional Pepeto trees.
